Last week I whipped up some chili to keep us warm during the cold temperatures. I will say this was one of my favorite meals growing up. My dad would make the best pot of chili with a side of cast iron cornbread. I cooked the same meal minus using the cast iron. When I'm cooking I don't measure all the time, I usually season to taste. I was a bit worried because I was missing a few ingredients but it turned out so good.
Ingredients:
Ground Beef
Kidney Beans
Diced Tomatoes
Green peppers
Onions
Beef Broth
Ketchup ( I didn’t have any tomato paste )
Seasoning
Salt
Pepper
Smoked Paprika
Garlic Salt
- Sauté green peppers and onions in pot with olive oil. Then add in your ground beef with seasonings. ( Season to your liking ). Once meat is cooked drain the mixture. Keep the pepper and onions.
- Add meat back into pot with, kidney beans, and diced tomatoes. Season to your liking with salt,pepper, smoked paprika, garlic salt etc
- I didn’t measure how much broth I need but so I just added enough that I think I would need.
- I added ketchup to give a flavor that tomato paste would. I did about 3 squirts of ketchup.
- Let its simmer on high for about 5 to 7 minutes . Stir, then set it on low heat for about 15 mins but don't forget to stir.

Sour Cream
Parsley
